Breakfast: Hick’ry pit in Campbell – linguica and eggs
2 eggs over easy
4 oz (or so) of linguica
3 slices of tomato (subbed for hash browns)
1 cup of mixed fruit (including pineapple, subbed for toast)

Lunch was skipped

Dinner: fried fish and broiled kale
2 cups of chopped kale broiled
4 oz of tilapia baked after “breading”
breading made of crushed pork rinds (chicharones!) and and egg white wash

Snack: 2 hard boiled eggs, some bacon avocado dip
hard boiled eggs, with some salt
avocado bacon dip
1 avocado, 3 strips bacon, 2 jalapenos, shallot, bunch of garlic
2 strips celery to dip

Saved the rest of the dip for later in the week. Also cooked up hard boiled eggs for snacks and salads as well as linguica to replace bacon in the mornings.

Good food prep day. 6+ veggies. OK. Could have been higher. Good protein. Carbs would have been lower if they gave me double veggies like I asked but they gave me fruit and tomatoes.
