Epic meal day. I fasted, but I still had a very tasty and filling meal. I’m going to note a little more about what I did today because it was so good! I had some extra time at home because I took the day off to fix the kitchen faucet. The hose that feeds the sprayer had apparently cracked and was leaking into the underneath of the sink. Luckily that wasn’t so bad, but it did mean I had to replace more than just a washer.

What do I do with extra time at home? I make an extra-size dinner.

Steak and Shrimp Ceviche.

Steak:
Grass Fed Ribeye. Marinated for 2+ hours in olive oil, oregano, and chopped garlic (about 8 cloves…)
Pulled out of fridge to come up to room temp for 30 minutes
Removed from marinade and salt and peppered
Seared on stove then baked to finish in oven to just medium rare.

Shrimp Ceviche (3ish servings):
10 peeled & deveined shrimp washed and tails removed
juice of 4 limes and one lemon
a bit (precision!) of white vinegar, maybe 2 tbsp (probably unnecessary)
more garlic (maybe another 8 cloves!)
Some salt and pepper
left together for 40 minutes in fridge covered
mixed in one whole mandolined zucchini
2 roughly chopped roma tomatoes
1/2 roughly chopped yellow onion
1 deseeded jalapeno (diced) – would have added more and left seeds if I was alone
left together for another hour in fridge again
mixed in a bunch of freshly chopped cilantro
mixed in a 1 cubed avocado
back into fridge for another 45 minutes or so
Pulled out of fridge for 30 minutes to come up to room temp

Yowsers. Very Very Very tasty. The ceviche was super-easy and tasty. Might have been nice to tease out more flavor beyond the tanginess, but it tasted right on to me. I love that the shrimp is chemically cooked without heat. Science! It was like eating a tub of salsa with shrimp in it. And I loved it.

All my veggies were from the ceviche… which is to say I maybe had 3 (some of the zucchini, avocado, onion, and tomato), and I ended up a little low calorically, but it’s a fast day, and I definitely did not feel hungry afterwards. I didn’t really feel hungry beforehand either, but that’s probably because of all the handyman time I spent on the faucet (3 trips to the hardware store and I bought some extra tools and some of the wrong pipe fittings). I’m pretty sure the fasting isn’t having any bad effects. As long as I get enough protein, I feel like I’m fine, and I’m reintroducing regular vitamins into the mix, too.

Oh, and I’m cheating. I am not supposed to weigh myself for the whole30 challenge… but I definitely am. And I’ve definitely lost weight. I’m a little bummed how effective it is, because I know I can’t maintain this weightloss velocity, but if I keep this up, I should have a lot to show for it by Feb first.
