Cheddar Chicken Stuffed Peppers

Took a recipe from the America’s Test Kitchen Light Recipes book for stuffed peppers.

Cut the top off a green pepper and fill it wiyh some ground chicken with rice, heirloom tomatoes, cheddar cheese, and minced garlic then bake.

It’s a little more robust than that, but it is certainly simple and tasty.
